Ingredients:
- 300g of beef
- 200g of sweet potatoes
- 1 medium onion
- 150g of mushrooms
- 100g of lettuce
- 3 cloves of garlic
- 150g of corn
- 150g of basmati rice

Instructions:
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potatoes into small cubes. Toss them with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20 minutes or until tender.
- Cook the basmati rice according to package instructions while the sweet potatoes are roasting.
- In a skillet over medium heat, add a drizzle of olive oil and sauté the diced onion and minced garlic until fragrant and translucent.
- Add the sliced mushrooms to the skillet and cook until tender, about 5 minutes.
- In the same skillet, add the beef (cut into strips or cubes) and cook until browned and cooked through, seasoning with salt and pepper to taste.
- Once the sweet potatoes are done roasting, remove them from the oven and combine them with the beef and mushroom mixture.
- Serve the beef and sweet potato mixture over a bed of cooked basmati rice, garnishing with fresh lettuce and sweet corn on the side.
