Savory Beef and Sweet Potato Bowl

Ingredients:


  • 300g of beef
  • 200g of sweet potatoes
  • 1 medium onion
  • 150g of mushrooms
  • 100g of lettuce
  • 3 cloves of garlic
  • 150g of corn
  • 150g of basmati rice

Kitchen Tools Needed:


  • Oven
  • Microwave Oven
  • Air Fryer
  • Stove Top

Instructions:


  • Preheat the oven to 200°C (400°F).
  • Peel and dice the sweet potatoes into small cubes. Toss them with a little olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 20 minutes or until tender.
  • Cook the basmati rice according to package instructions while the sweet potatoes are roasting.
  • In a skillet over medium heat, add a drizzle of olive oil and sauté the diced onion and minced garlic until fragrant and translucent.
  • Add the sliced mushrooms to the skillet and cook until tender, about 5 minutes.
  • In the same skillet, add the beef (cut into strips or cubes) and cook until browned and cooked through, seasoning with salt and pepper to taste.
  • Once the sweet potatoes are done roasting, remove them from the oven and combine them with the beef and mushroom mixture.
  • Serve the beef and sweet potato mixture over a bed of cooked basmati rice, garnishing with fresh lettuce and sweet corn on the side.
