Ingredients:
- 1 cup of rice
- 2 medium tomatoes
- 1 medium onion
- 2 spring onions
- 3 cloves of garlic
- 2 green chillies

Instructions:
- Rinse the rice under cold water until the water runs clear and then soak it for 15 minutes. Drain the water afterwards.
- Finely chop the onions, tomatoes, garlic, green chillies, and spring onions.
- In a saucepan, heat a small amount of oil over medium heat. Add the chopped garlic and sauté until fragrant.
- Add the chopped onions and green chillies to the pan. Cook until the onions are translucent.
- Stir in the chopped tomatoes and cook until they soften, around 1-2 minutes.
- Add the soaked, drained rice to the pot and mix well with the tomato mixture.
- Pour in 2 cups of water, add a pinch of salt, and bring to a boil. Once boiling, reduce heat to low, cover, and let it simmer for 10-12 minutes until the rice is cooked and the water is absorbed.
- Fluff the rice with a fork and top with chopped spring onions before serving.
