Black Fork Curry

Ingredients:


  • 200g of black beans
  • 150g of coconut milk
  • 100g of white fish (such as cod or tilapia)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, minced
  • 2 tablespoons of curry powder
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:


  • Heat the olive oil in a wok over medium heat. Add the diced onion and sauté until translucent.
  • Stir in the minced garlic and ginger, cooking for another minute until fragrant.
  • Add the curry powder and sauté for an additional minute, allowing the spices to bloom in the oil.
  • Pour in the coconut milk and bring to a gentle simmer.
  • Add the black beans and give the mixture a good stir, allowing the flavors to meld together for about 5 minutes.
  • Gently add the white fish pieces into the curry sauce, cooking until the fish is opaque and flakes easily, approximately 5-7 minutes.
  • Season with salt and pepper to taste and garnish with fresh cilantro before serving.
