Quick Tomato and Onion Scramble

Instructions:


  • Melt the butter in a microwave-safe bowl for about 20 seconds in the microwave.
  • Add the chopped onion to the melted butter and microwave for an additional 30 seconds until slightly soft.
  • Beat the eggs in a separate bowl and season with salt and pepper if desired.
  • Pour the beaten eggs into the bowl with the onions, and then add the chopped tomato.
  • Stir gently to combine and microwave for 1 minute, then stir again.
  • Return to the microwave and cook for another 1-2 minutes, stirring every 30 seconds, until eggs are cooked to your desired consistency.
