Herb-Roasted Potatoes with Garlic

Ingredients:


  • 800g of potatoes
  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 2 teaspoons of dried rosemary
  • 2 teaspoons of dried thyme
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions:


  • Preheat the oven to 200°C (400°F).
  • Wash the potatoes thoroughly and cut them into evenly sized wedges.
  • In a mixing bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, salt, and black pepper.
  • Add the potato wedges to the bowl and toss until they are well coated with the herb mixture.
  • Spread the coated potato wedges on a baking sheet in a single layer.
  • Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  • Once roasted, remove from the oven and let them cool slightly before serving.
  • Garnish with fresh parsley before serving.
