Healthy Egg Melt Cheese Sandwich

Ingredients:


  • 4 slices of whole grain bread
  • 4 large eggs
  • 100g of low-fat cheese, shredded
  • 1 ripe avocado, sliced
  • 2 tablespoons of Greek yogurt
  • 1 tablespoon of fresh chives, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:


  • Preheat the oven to 180°C (350°F).
  • In a frying pan, heat a little olive oil over medium heat.
  • Crack the eggs into a bowl and whisk them with salt and pepper until combined.
  • Pour the eggs into the pan, stirring gently until they start to set, then lower the heat and let them cook until fully set.
  • While the eggs cook, toast the slices of whole grain bread in the oven for about 5 minutes until golden and crispy.
  • Once the eggs are cooked, place a portion of the scrambled eggs on two slices of the toasted bread.
  • Sprinkle the shredded low-fat cheese over the eggs and place back in the oven for about 2-3 minutes to melt the cheese.
  • Remove from the oven and top with sliced avocado and a dollop of Greek yogurt.
  • Sprinkle chopped chives over the sandwiches for extra flavor before topping with the remaining toasted bread.
