Ingredients:
- 4 slices of whole grain bread
- 4 large eggs
- 100g of low-fat cheese, shredded
- 1 ripe avocado, sliced
- 2 tablespoons of Greek yogurt
- 1 tablespoon of fresh chives, chopped
- Salt and pepper to taste
- Olive oil for frying

Instructions:
- Preheat the oven to 180°C (350°F).
- In a frying pan, heat a little olive oil over medium heat.
- Crack the eggs into a bowl and whisk them with salt and pepper until combined.
- Pour the eggs into the pan, stirring gently until they start to set, then lower the heat and let them cook until fully set.
- While the eggs cook, toast the slices of whole grain bread in the oven for about 5 minutes until golden and crispy.
- Once the eggs are cooked, place a portion of the scrambled eggs on two slices of the toasted bread.
- Sprinkle the shredded low-fat cheese over the eggs and place back in the oven for about 2-3 minutes to melt the cheese.
- Remove from the oven and top with sliced avocado and a dollop of Greek yogurt.
- Sprinkle chopped chives over the sandwiches for extra flavor before topping with the remaining toasted bread.
