Ingredients:
- 150g spinach
- 100g onion
- 100g leek
- 100g celery
- 150g carrots
- 150g brokoli
- 200g potatoes
- 200ml almond milk
- salt
- 4 tortillas
- 100g pressed rice
- 150g yoghurt
Kitchen Tools Needed:

- Air Fryer
- Stove Top
Instructions:
- Chop the onion and leek finely, fry in a pan with a little olive oil until they turn pink.
- Dice the carrots, celery and potatoes, add them to the pan and fry for a few more minutes.
- Add the broccoli and stir, then add the spinach and cook a little longer.
- Season with salt and add the almond milk, once the mixture boils turn off the heat.
- Heat the tortillas in the oven.
- When you take a tortilla, put some of the veggie mixture on it, sprinkle pressed rice on it and add yogurt.
- Repeat the same process with the other tortillas.
