Colorful Vegetable Tortilla

Ingredients:


  • 150g spinach
  • 100g onion
  • 100g leek
  • 100g celery
  • 150g carrots
  • 150g brokoli
  • 200g potatoes
  • 200ml almond milk
  • salt
  • 4 tortillas
  • 100g pressed rice
  • 150g yoghurt

Kitchen Tools Needed:


  • Oven
  • Air Fryer
  • Stove Top

Instructions:


  • Chop the onion and leek finely, fry in a pan with a little olive oil until they turn pink.
  • Dice the carrots, celery and potatoes, add them to the pan and fry for a few more minutes.
  • Add the broccoli and stir, then add the spinach and cook a little longer.
  • Season with salt and add the almond milk, once the mixture boils turn off the heat.
  • Heat the tortillas in the oven.
  • When you take a tortilla, put some of the veggie mixture on it, sprinkle pressed rice on it and add yogurt.
  • Repeat the same process with the other tortillas.
