Ingredients:
- 2 large eggs

- 1 teaspoon of vanilla essence
- 200ml of milk
- 200g of flour
- 2 teaspoons of baking powder
- 50ml of oil

Instructions:
- In a mixing bowl, beat the eggs and sugar until the mixture is light and fluffy.
- Melt the butter and allow it to cool slightly, then mix it into the egg and sugar mixture.
- Add the vanilla essence and milk, mixing until well combined.
- In a separate bowl, sift together the flour and baking powder.
- Gradually fold the dry ingredients into the wet mixture until no lumps remain.
- In a separate small bowl, mix the oil into the batter until incorporated.
- Pour the batter into a greased microwave-safe dish.
- Microwave on high for 10-15 minutes, or until the center is set and a toothpick comes out clean.
- If using an air fryer, transfer the batter to a suitable dish and cook at 160°C for 20-25 minutes.
- Let it cool for a few minutes before serving.
