- 50g of jasmine rice

Instructions:
- Begin by cooking the jasmine rice according to the package instructions. Once done, set it aside.
- While the rice is cooking, slice the chicken breast into small pieces and season with salt and pepper.
- In a pan, heat the olive oil over medium heat and add the minced garlic, sautéing for about 30 seconds until fragrant.
- Add the sliced chicken to the pan and cook for 5-7 minutes, stirring occasionally until the chicken is cooked through.
- Meanwhile, chop the bell peppers into bite-sized pieces.
- Once the chicken is cooked, add the chopped bell peppers to the pan and stir-fry for an additional 3-4 minutes until they are slightly tender but still crisp.
- Serve the chicken and bell pepper mix over a bed of jasmine rice.
