Coconut Rice Snack Bites

Ingredients:


  • 1 cup of rice
  • 2 tablespoons of sugar
  • 1 cup of grated coconut
  • 1 tablespoon of coconut oil
  • a pinch of salt
  • 1 small onion, finely chopped

Instructions:


  • Rinse the rice under cold water and drain.
  • In a small saucepan, combine the rice, 1 cup of water, and a pinch of salt. Bring to a boil over medium heat.
  • Once boiling, reduce the heat to low, cover, and simmer for about 5 minutes or until the rice is fully cooked and water is absorbed.
  • In a separate pan, heat coconut oil over medium heat. Add the chopped onion and sauté until translucent.
  • Once the rice is cooked, add the sautéed onion, grated coconut, and sugar. Mix everything until well combined.
