Ingredients:

  • 100g of cooked quinoa
  • 150g of canned chickpeas (drained and rinsed)
  • 50g of cherry tomatoes (halved)
  • 50g of cucumber (diced)
  • 30g of red bell pepper (diced)
  • 30g of parsley (chopped)
  • 30ml of olive oil
  • 15ml of lemon juice
  • Salt and pepper to taste

  • Mixing bowl
  • Chopping board
  • Knife
  • Measuring cups
  • Spoon

Instructions:

  • In a mixing bowl, combine the cooked quinoa and the drained chickpeas.
  • Add the halved cherry tomatoes, diced cucumber, diced red bell pepper, and chopped parsley to the bowl.
  • Drizzle the olive oil and lemon juice over the salad mixture.
  • Season with salt and pepper to taste, and mix well until everything is evenly combined.
