Ingredients:
- 1 cup of Basmati Rice
- 1 cup of Milk (can be substituted with water)
- 200g of Blackberry
- 200g of Blueberries
- 200g of Strawberry
- 200g of Kiwi
- 100g of Almonds, chopped
- 150g of All Purpose Flour
- 100g of Sugar
- 50g of Brown Sugar
- 2 Eggs
- 1 tsp of Sea Salt
- 100g of Breadcrumbs

Instructions:
- Preheat the oven to 350°F (175°C).
- In a pot, bring 2 cups of water or milk to a boil and add the Basmati rice, reduce heat to low and cover. Cook for about 15 minutes or until water is absorbed.
- In a large mixing bowl, mash half of the strawberries and blackberries, and add the blueberries and diced kiwi. Stir in the chopped almonds.
- In another bowl, whisk the eggs with sugar, brown sugar, and sea salt until combined.
- Once the rice is cooked, mix it into the berry and almond mixture, then pour in the egg mixture and combine well.
- Slowly add the all-purpose flour to the mixture and fold until fully incorporated.
- Grease a baking dish and pour the mixture in, spreading it evenly. Sprinkle with breadcrumbs on top.
- Place the dish in the oven and bake for about 45 minutes, or until the top is golden brown and the center is set.
- Let sit for a few minutes before serving. Can be served warm or cold.
