Berry Almond Quinoa Bake

Ingredients:


  • 1 cup of Basmati Rice
  • 1 cup of Milk (can be substituted with water)
  • 200g of Blackberry
  • 200g of Blueberries
  • 200g of Strawberry
  • 200g of Kiwi
  • 100g of Almonds, chopped
  • 150g of All Purpose Flour
  • 100g of Sugar
  • 50g of Brown Sugar
  • 2 Eggs
  • 1 tsp of Sea Salt
  • 100g of Breadcrumbs

Kitchen Tools Needed:


  • Oven
  • Microvawe Oven
  • Stove Top

Instructions:

  • Preheat the oven to 350°F (175°C).
  • In a pot, bring 2 cups of water or milk to a boil and add the Basmati rice, reduce heat to low and cover. Cook for about 15 minutes or until water is absorbed.
  • In a large mixing bowl, mash half of the strawberries and blackberries, and add the blueberries and diced kiwi. Stir in the chopped almonds.
  • In another bowl, whisk the eggs with sugar, brown sugar, and sea salt until combined.
  • Once the rice is cooked, mix it into the berry and almond mixture, then pour in the egg mixture and combine well.
  • Slowly add the all-purpose flour to the mixture and fold until fully incorporated.
  • Grease a baking dish and pour the mixture in, spreading it evenly. Sprinkle with breadcrumbs on top.
  • Place the dish in the oven and bake for about 45 minutes, or until the top is golden brown and the center is set.
  • Let sit for a few minutes before serving. Can be served warm or cold.
